- Model: Sassafras Superstone Covered Baker
Review Sassafras Superstone Covered Baker / Sassafras 2575:Turn your home oven into a commercial brick oven and create crusty, light French bread just like your favorite bakery. This French Bread Baker is made by one of the oldest potteries operating in the United States. Constructed from natural clay, it measures 14. 5" x 5. 5" x 3. 25" deep. It evenly distributes the oven heat and absorbs moisture released from the dough when baking. The results are some of the best traditional loaves of French bread you'll ever taste. This heavy, natural-colored baker duplicates the effects of a brick-lined oven, distributing heat and absorbing moisture to produce crisp-crusted breads. It can also duplicate the clay-pot-method of cooking other foods, like beef with vegetables. [+]
Its domed lid-with-handle has a lip that fits onto the oblong bottom. For bread, the final rise takes place right in the baker. It works in conventional and convection ovens and even in a microwave. Recipes are included. -Fred Brack. |

- Model: Frieling Round Brotform 1-Pound Bread Rising Basket
Review Frieling Round Brotform 1-Pound Bread Rising Basket / Frieling 3001:Used for bread rising and serving (not for baking) the Brotform is crafted from natural cane. The baskets will give better rise, great texture, a crunchy crust and a beautiful coil pattern to bread you make at home. They are also very attractive baskets for serving bakery-bought bread as well, lending an air of authenticity to your table. This traditional bread rising basket lets you bring a taste of Europe into your kitchen. Just dust the 8-inch round basket with flour, put your kneaded dough in, and watch it rise. The natural cane coils shape and decorate the loaf the old-fashioned way. When it's done rising, remove it from the basket and pop it in the oven. The final result? A country bread with a great texture and crunchy crust. To remove any remaining flour, simply tap the basket on the counter. The only other maintenance is an occasional hand washing in warm water. This sturdy basket is even attractive enough to double as a serving piece for outdoor meals and entertaining. -Irene Svete. |

- Model: Sassafras La Cloche Brick Oven
Review Sassafras La Cloche Brick Oven / Sassafras 1005:One of the earliest ways to bake bread was underneath a curved cover or cooking pot placed over an open hearth. This is such a cooking bell made from hard-fired clay that nests on a lipped baking stone 10" in diameter. Place your bread dough on the pie-shaped base, cover it with the bell, then put it in a preheated oven. A 2-pound loaf fits under the 8 1/2" high dome. The lid traps moisture escaping from the bread to create the steam needed to produce a light, brittle crust. During the last few minutes, remove the cover to lightly brown the crust. This heavy stoneware dish and lid from Sassafras brings an ancient Roman and Greek cooking method to the present day. Once used as a portable oven for cooking bread, fish, and meats, la cloche (or cooking bell) now helps modern cooks bake lighter, crustier bread and juicier fish and meats. The dish also doubles as a rustic serving plate for finished foods. To use, arrange dough or meat on the bottom dish, cover with the domed lid, and place in the oven on the lowest oven rack. [+]
Be sure to season the dish and lid before use with a coating of cooking oil for best results. |

Pyrex was the first to create a line of glass bakeware so cooks could actually see how their food was cooking. At the time, the idea was revolutionary; now-like all great innovations-we take it for granted. In fact, these days a loaf dish from Pyrex (a company that's been making quality glass products for the better part of a century) costs about as much as a sandwich at your local deli. Not a bad deal, considering this dish works equally well in the oven, microwave, freezer, and dishwasher. Regardless of the type of loaf you're craving-be it cranberry, banana, pumpkin, or carrot-Pyrex's loaf dish gets the job done and transitions beautifully to your table when you're ready to serve. -Meg Heffernan. |
